After drilling the head lengthwise for an inch or so with a (letter size) 'I' drill, I attempted to thread it 5/16"X24 with a hand tap. Using 'Magic Tap' I couldn't get the tap to go more than 3 or 4 threads deep before it got too hard to turn.

The things we have found that work well are to make sure to use dies made for stainless steel (but you already knew that), use oil designed for stainless (we use Ridgid Extreme Perfomance it used to be call Stainless cutting oil), and we also keep the dies seperate and only use them on stainless.
